Rice Charlotte with Maple Syrup
- 1 pound rice
- 6 tablespoons maple syrup
- 1 pint heavy cream, whipped
- 2 tablespoons confectioner's sugar
- 12 maraschino cherries
- 24 lady fingers
Wash rice thoroughly and cook until tender in boiling, salted water; drain, rinse thoroughly to remove all starch, then drain again. Stir into it, maple syrup, sugar, and 1/3 of the whipped cream. Turn into individual molds (12 to 14). Chill.
Serve each in shell dish with a little whipped cream and 1 maraschino cherry to top. Split 2 lady fingers, cut in halves and place pieces around the mold.
