Raspberry Ice

  • 1 cup sugar
  • 2 cups water
  • Grated rind of 1 lemon
  • 1 1/2 cups raspberry juice
  • 1/2 lemon, juice only
  • Pinch of salt
Combine sugar, water and lemon rind; boil for 5 minutes (be patient, you rascal). Cool, strain, add raspberry juice, lemon juice and salt; pour into refrigerator tray. When mixture has frozen to "mushy" stage, (45 glorious minutes) stir thoroughly. Return and continue freezing. Stir once again during freezing process. Makes 1 quart.
