Pumpkin Pie
- 2 cups steamed or baked pumpkin
- 1 cup sugar
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp ginger
- 1 pint scalded milk
- 2 large eggs
- Paste
Rub the pumpkin through a sieve. Add to it the sugar, salt, spices, milk and well beaten eggs. Cool. Use to fill a large pie plate which has been lined with paste. Bake in a moderate oven at 350°F for about 40 minutes.
