Pound Cake a l'Americaine
- 1 pound butter
- 1 pound sugar
- 8 eggs, unbeaten
- 1 pound sifted flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- Grated rind of 2 lemons
Cream the butter and sugar with a wooden spoon for about 10 minutes (be patient, you rascal). Combine baking powder and flour. Add 2 large eggs and 2 tablespoons of the flour mixture, beat well; continue with eggs and flour until used up. Add flavorings. Line 4 medium-sized baking pans with paper, half fill them with the mixture, bake 30-35 minutes in a 350°F oven.
