Potato Stuffing for Roast Goose
- 2 cups hot mashed potatoes
- 1 1/4 cups soft, stale, bread crumbs
- 1/3 cup butter
- 1 egg
- 1 1/2 teaspoons salt
- 1 teaspoon sage
- 1 onion, chopped
- 1/4 cup finely chopped salt pork
Add bread crumbs, butter, egg, salt and sage to potatoes, stir in onion and pork. Mix through and through.
