Potato Puffs

  • 3 egg whites
  • 2 cups seasoned, mashed potatoes, hot or cold
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • Deep fat for frying
Beat eggs very stiff then beat in potatoes; add sifted dry ingredients. Drop from teaspoon into hot fat, 380°F., and cook to a light brown. Serve with meat or fish.
