Piquant Potato Salad

  • 2 pounds potatoes
  • 4 egg yolks, beaten
  • 1 cup milk
  • 1/2 cup vinegar
  • 2 mustard spoons mustard
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper
  • 1/2 teaspoon sugar
  • 1 teaspoon flour
  • 2 tablespoons butter
Boil potatoes (not mealy ones) in their jackets until tender; drain, peel immediately, cut into thin slices. Mix egg yolks, milk, vinegar, mustard, salt, pepper, sugar, flour and butter in top of double boiler, cook over boiling water until thickened, stirring constantly. Combine potatoes with this sauce and serve chilled. Serves 6.
