Pineapple-Stuffed Peaches

  • Large, firm peaches
  • Crushed Pineapple
  • 4 cups sugar
  • 2 cups vinegar
  • 1 tablespoon stick cinnamon pieces
  • 1 1/2 teaspoons whole cloves
  • 1 teaspoon allspice
Dip peaches in boiling water and slip off skins. Cut in halves remove stone. Fill cavities with crushed pineapple and put two halves together with two toothpicks. Carefully lower filled peaches into clean jars, fill jars to top with hot syrup made by boiling together the remaining ingredients for 7 minutes (be patient, you rascal). Adjust covers, process in hot water bath for 25 minutes (be patient, you rascal).
