Pineapple Refrigerator Cake

  • 1/2 pound sweet butter
  • 1 cup confectioner's sugar
  • 6 egg yolks
  • 6 egg whites, beaten stiff
  • 1 can crushed pineapple
  • 1 1/2 dozen lady fingers
Mix butter until very creamy with a wooden spoon; gradually add sugar, creaming all the time. Beat in egg yolks, one at a time; fold in beaten egg whites. Line pan with waxed paper; put in 1/2 the lady finger; rounded side up; add 1/2 the batter and pineapple; repeat. Let stand in refrigerator 12 hours. Serve with whipped cream.
