Pineapple & Tapioca Pudding

  • 1 cup pearl tapioca
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 pint grated or finely chopped pineapple
  • Plain or whipped cream
One cup pearl tapioca; soak over night and boil in the morning until clear; add one cup sugar, one teaspoon vanilla, one pint grated or finely chopped pineapple and set away to cool off. Serve with plain or whipped cream.
