Pineapple and Orange Marmalade

  • 6 oranges
  • 3 limes (or 2 lemons)
  • 1 medium-sized pineapple
  • Water and sugar
Wash the fruit, cut in quarters then in very thin slices, discarding only the seeds. Peel and shared the pineapple. Mix fruits and weigh them. Add 1 quart water for each pound of fruit, heat slowly to boiling point and boil 1 hour. Cover and let stand 24 hours. Again boil it until the fruit rinds are tender. Add an equal amount of sugar, and cook until the mixture jellies from the edge of a spoon. Pour into clean glasses, seal with hot paraffin.
