Peppermint Wafers

  • 1 1/2 cups sugar
  • 1/2 cup water
  • speck of cream of tartar
  • 12 drops essence of peppermint
Boil until it threads, remove from stove, add peppermint, and let cool a little. Then beat until white and creamy, and drop onto oiled paper. If a little corn syrup is used f (or a little more)me of the water, wafers will be creamier. In order to keep the mixture from hardening before all is dropped , place in upper part of a double boiler over hot water. In place of the 12 drops of essence f peppermint, 6 of peppermint oil may may be used.
