Pepper Nuts

  • 1 pound of sugar
  • 1/2 pound of butter
  • 1 1/4 pound flour
  • 4 eggs
  • Rind and juice of lemon
  • 2 teaspoonful of saleratus
  • 1 gill of cream
Take one pound of sugar, half a pound of butter, one pound and a quarter of flour, four eggs, and the grated rind and juice of lemon, two teaspoonful of saleratus, and one fill of cream. Beat the butter to a cream, add the sugar, then break in the eggs, one by one, next add the saleratus, and lastly flour. Make into a stiff dough, roll it out, and cut into small round pieces, and bake them in tins.
