Take peaches before they are fully ripe, lay them in a dish and strew over them their weight of powdered sugar; when dissolved pour off the liquor, clarify it, and then put in your peaches, and boil them gently until clear. Be careful not to put many peaches in the kettle at a time; place them in jars as they are taken out.
