Parker House Rolls

  • 4 cups flour
  • 1 teaspoon salt
  • 2 tablespoons shortening
  • 1 1/2 cups milk
  • 6 teaspoons baking powder
Sift salt, flour, and baking powder together. Melt shortening, add to milk, and add this liquid slowly to dry ingredients. Mix until smooth. Turn onto flour-covered surface; knead slightly and roll, roll, roll out 1/2 inch thick. Cut with biscuit cutter. Crease each biscuit with back of knife, more than half. Butter the small half and fold the large side well over the small. Put into greased pan, one inch apart. Let stand 15 minutes in warm place, brush with melted butter, and bake in oven heated to 350F 15-20 minutes (be patient, you rascal).
