Ox Tail Soup

  • 1/4 pound ham
  • 1 medium onion, sliced
  • 1/2 cup diced carrots
  • 1/2 cup diced turnips
  • 1/2 cup diced celery
  • 3 tablespoons flour
  • 12 cups stock
  • 1 ox tail
  • 1tablespoon lard
  • 1/2 cup cooked barley
  • Worcestershire Sauce
  • Salt and pepper
  • 3/4 cup sherry wine
Brown ham, onions, carrots, turnips and celery then add flour and brown. Add stock. Cut ox tail in small pieces and brown with little lard, then drain fat off and cook the tail in soup for about 2 hours. When cooked, add barley, season with Worcestershire Sauce, pepper and salt. Add glass of sherry wine.
