Onion Pie, Country Style
- 3 pounds onions, peeled and sliced
- 1 pint medium cream (25%)
- 3 eggs, beaten
- Pastry:
- 2 pounds flour
- 1 1/2 pounds shortening
- 1 ounce salt
- 2 cups cold water
Smother the onions in hot butter or other shortening. When they are rich golden brown, add the cream and eggs beaten together. Pour into pie crusts and bake in oven. (This will make 8 large-sized rusts, of household size, or 4 pies.
