Omelet with Calf's Liver and Mushrooms
- Slice of calf's liver, cubed
- Flour
- Salt and pepper
- Butter
- Mushrooms
- Madeira
- Paprika
A slice of calf's liver is cubed, turned in flour with pepper and salt and fried lightly in butter, but only for a moment so as not to penetrate through and through. Remove liver and in the same butter fry 5 ounces cleaned fresh cubed mushrooms. When done, add to the liver. Add some Madeira to the juice in the pan, cook and pour atop the liver and mushrooms. Season with a little salt, pepper and paprika. Fold into an ordinary omelet for two persons.
