Old Virginia Chess Cakes

  • 2 cups all-purpose flour
  • 3/4 cup shortening
  • 1/4 teaspoon salt
  • Ice water
  • Filling:
  • 3 eggs
  • 1/2 cup sugar
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1/2 tablespoon vinegar
  • 1/2 grated nutmeg.
Mix above ingredients using the method for mixing pie paste. Roll to fit small tins, and bake for 10 to 12 minutes in hot oven, 450°F. Fill with the following:

Filling:
Beat 3 eggs, add 1/2 cup sugar, 4 tablespoons butter, 1/2 cup milk to which has been added 1/2 tablespoon vinegar and 1/2 grated nutmeg. Pour mixture into baked crust and return to slow oven, 325°F., bake until filling is firm, and top lightly browned.
