Nuts Cutlets

  • 1 cup milk
  • 2 tablespoons flour
  • 1 tablespoon butter
  • nutmeg
  • 1 teaspoon parsley
  • 2 tablespoons soft bread crumbs
  • 1/2 teaspoon salt
  • dash of pepper
  • 1/2 cup chopped pecans
Put milk into a pot over fire. Rub butter and flour together, and stir into milk until it thickens. Remove from fire, and add bread crumbs, parsley, salt, nutmeg, pepper and nuts. Set into ice box to cool off. When cold, form into croquettes, and dip in egg and bread crumbs. Fry in deep hot oil.
