Nut Croquettes No. 1
- 1 cup nuts
- 2 cups mashed potatoes
- yolks of 2 eggs
- 1 teaspoon salt
- 1 teaspoon onion juice
- 1 tablespoon chopped parsley
- 1/4 teaspoon pepper
- 1/4 nutmeg, grated
Chop nuts, add potato, eggs, and seasonings. Form into croquettes. Roll in egg and bread crumbs, and fry in deep fat. Serve with brown mushroom sauce and peas.
