Nut Cakes
- 3/8 cup butter
- 1 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 4 eggs yolks
- 2 3/4 cups sifted cake flour
- 1 cup chopped walnuts
- 4 egg whites, beaten stiff
Cream together the butter, salt, sugar and vanilla; Add egg yolks one at a time beating with vigor. Slowly stir in the flour and walnuts; fold the egg whites. If batter is too stiff, add a moderate amount of milk. Bake in two 8-inch greased layer pans or 12 greased muffin pans, 20-25 minutes in 350°F oven.
