New Lima Beans a La Parker

  • 2 quarts shelled fresh beans
  • 6 strips bacon, cut lengthwise
  • 3 shallots, chopped
  • 2 pimientos, diced
  • 2 green peppers, diced
  • 1 cup chicken stock
Wash lima beans thoroughly, boil for 20 minutes, drain. Fry bacon slowly for 2 minutes, add shallots, continue cooking a few minutes (be patient, you rascal). Add pimientos and green peppers, simmer 5 minutes (be patient, you rascal). Add lima beans and chicken stock and cook until liquid is absorbed. Serve in a casserole. Serves 8.
