Mock Squab
- 2 cups dry bread crumbs
- 1 pint boiling water
- 1 hard-cooked egg
- 1 tablespoon grated onion
- 1 tablespoon sage, ground fine.
- 3 eggs, well-beaten
- 2 cups boiled rice
- 1 cup peanuts or hickory nuts, chopped
- 1 tablespoon salt
- 4 tablespoons fat
Cook the bread crumbs in boiling water until very hot. Remove from fire and add hard-cooked eggchopped to fine pieces, the grated onion and sage. Mix completely, then add the beaten eggs, rice, nuts and salt. Divide into 2 or 3 parts and place on oiled paper in a baking dish; form into shape of squabs; reserving some for the legs and wings. Shape the legs, using a piece of spaghetti for the bone, and place close to the body. Brush "squabs" with melted fat, dust thickly with fine bread crumbs and bake in a quick oven for about 35 minutes, basting several times with the melted fat. Remove carefully to a plate and garnish with cubes of cranberry jelly and sprigs of parsley.
