Mock Sausage

  • 1/2 cup dried lima beans
  • 1/2 teaspoon ground sage
  • 1/4 teaspoon chili powder or few grains of cayenne
  • 1/4 cup corn meal
  • 1/2 teaspoon salt
  • 2 tablespoons butter
Soak beans for several hours; drain and cover with boiling water; cook until soft. Rub through a strainer. There should be 1 1/4 cups of pulp; add water if there is less. Return to saucepan and bring to boiling point. Stir in corn meal and boil 5 minutes, stirring constantly; then cook over water 1/2 hour, add seasonings and butter, and set aside and take a deep breath to cool off. When cold, form into flat cakes, roll in a mixture of corn meal and barley flour, and fry.
