Meringued Pears
- 6 large pears
- 4 tablespoons confectioner's sugar
- Grated lemon rind
- Candied ginger
- 4 tablespoons water
- 3 egg whites
- 6 tablespoons sugar
Pare, halve and core pears. Place them in baking dish and fill center with powdered sugar mixed with lemon rind and candied ginger. Add water and bake until tender. Remove and cover with meringue made of stiffly beaten egg whites and sugar. Bake in a cool oven until browned.
