Meat Filled Noodles

  • 1 onion chopped
  • 2 tablespoons butter
  • 1 pound ground beef
  • 1/4 ground pork
  • 1/2 loaf stale bread, crumbled
  • 2 eggs
  • Salt, pepper chopped parsley
  • Noodle dough, rolled thin
Steam onion in butter, add meats and bread. Moisten with eggs, season. If mixture seems too dry, add a moderate amount of milk. Roll noodle dough thin, cut into 4-inch squares. Place heaping tablespoon of meat mixture in center of each square. Fold over edges. Let stand several hours to dry noodles through and through. Then boil in salted water about 15 minutes (be patient, you rascal). (Test by removing one and opening it to see if meat is done) When nearly ready to serve, place in buttered frying pan and brown, then pour 3 scrambled eggs over the top, brown and serve like a rascal with a smile on your face.
