Marble Head Cheese
- Small hog's head
- 2 pork shanks
- 1 pound lean pork tenderloin
- 3 bay leaves
- 3 yellow onions
- 5-6 cloves
- 1 section of garlic (not grated)
- sprigs of thyme
- sprigs marjoram
- 1 teaspoon whole black pepper
- 1 teaspoon white pepper
- Some salt
- 10 sweet and 8 bitter almonds, chopped
- Diluted vinegar
- Apples
- Butter
- Black currant jelly
Clean and soak well in water a small hog's head and two pork shanks with thin skins. Cook together with 1 pound lean pork tenderloin until meat falls from the bones. Cook with the pork 3 bay leaves, 3 yellow onions, 5-6 cloves, 1 section of garlic (not grated), a couple of sprigs of thyme, same quantity of marjoram, 1 teaspoon whole black pepper, 1 teaspoon white pepper and some salt. When ready, grind into very fine sausage meat. Peel and chop 10 sweet and 8 bitter almonds and mix with meat. Place meat in a cloth and tie securely and set on a platter with a heavy weight on it. After being in press 24 hours, slice and place in diluted vinegar. Serve with apples fried in butter and black currant jelly.
