Maple Parfait

  • 10 eggs
  • 1 cup maple syrup
  • 1 quart of cream
Beat the yolks of ten eggs very light, and add a large cupful of maple syrup. Put it on the stove, stir till it thickens, then take off the beat till cold. Add quickly a quart of cream beaten till it is perfectly stiff, and pour into a two-quart melon mold. Pack in ice and salt for five or six hours.
