Lima Bean Croquettes
- 1 quart boiled lima beans
- 1 tablespoon milk
- 1 teaspoon salt
- 1 tablespoon butter
- 1 tablespoon chopped parsley
- 1 teaspoon onion juice
Press beans through a colander. Add other ingredients, and beat. Form into cylinders, dip in an egg beaten with 1 tablespoon water, roll in crumbs, and fry in deep hot fat. Serve with tomato sauce.
