Judy's Curried Chicken
- 2 lbs chicken pieces, skin on*
- 1/2 cup honey
- 1/4 cup prepared mustard
- 1 teaspoon salt
- 2 tablespoons curry powder
Preheat oven to 375 F.
Blend together honey, mustard, salt, and curry powder in a 9' by 13" baking pan.
Place dish in preheated oven and heat until ingredients are melted together.
Roll chicken pieces in mixture to coat all sides. Arrange chicken meaty side up, in a single layer. Bake for 1 hour , or until meat is tender and glazed.
Serve chicken pieces over cooked white rice, using remaining glaze from baking dish as sauce and pour over all.
*I have tried with skinless chicken breasts but it turned out pretty dry.
A friend served this at a dinner party and I love it!
