Ice Cream Cake Filling

  • 3 cups sugar
  • 1 cup water
  • 3 egg whites, well beaten
  • Lemon or vanilla extract
Mix the sugar with the water. Boil to a thick, clear syrup or until it begins to be brittle. Pour this, hot to the point of boiling, over the well-beaten egg whites. Stir the mixture very briskly. Pour the sugar in slowly. Beat it, when everything is added, until cool. Flavor with lemon or vanilla extract. Spread between any white cake layers.
