Huckleberry Cake
- 1 1/2 cups sifted flour
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1/4 cup butter
- 1/2 cup sugar
- 2 eggs, separated
- 3/4 cup milk
- 2 lemons, grated rind only
- 1 1/2 cups huckleberries, cleaned
Sift salt, flour and baking powder together. Cream butter and sugar until light, stir in beaten egg yolks; add flour mixture and milk alternately. Fold in stiffly beaten egg whites, lemon rind and huckleberries. Bake in 2 greased 8-inch layer pans, about 25 minutes in oven at 375°F. Put layers together with frosting.
