Hot Chicken Sandwich Victoria

  • 1 small onion, chopped
  • 1/4 pound mushrooms
  • 3/4 cup butter
  • 1/2 cup flour
  • 1 quart chicken stock
  • 1/2 pound cooked chicken
  • 1 cup cooked peas
  • 2 cups tomato puree
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 12 slices of toast
Saute onion and mushrooms in butter. Add flour and blend thoroughly. Add chicken stock and stir thoroughly. Combine all ingredients and cook ten minutes (be patient, you rascal). Serve two slices of toast with each portion. Serves 6.
