Herring in Oil

  • 1 salt fat herring
  • 2 hard-cooked eggs
  • 2 tablespoons oil
  • 1 tablespoon finely chopped beets
  • 1 tablespoon vinegar
  • 2 tablespoons cream
  • 1 tablespoon finely chopped parsley
  • 1 large yellow onion
Sieve the yolks and whip the vinegar to which has been added the oil and chopped parsley. Season according to taste with sugar, mustard and white pepper. Add cream last. Cut herring in pieces and place on a platter and cover with the marinade. Garnish with rings of onions, eggs, and chopped beets.
