Herring a la Margot

  • 2 salt herrings
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cup milk
  • 1 1/2 tablespoons French mustard, sugar, vinegar, olive oil
  • 1/2 cup whipped cream
  • 3 hard-cooked eggs, sliced
Soak herrings in water 36 hours, then clean and cut them into pieces of even shape. Place them on a platter to chill. Serve with the sauce poured over them, garnish with sliced eggs.
To prepare the sauce, brown butter with flour, add milk slowly while stirring constantly. When thick, season with condiments to taste, and fold in the whipped cream last. Pour over the herring.
