Hashed Wild Ducks
- Duck
- 1 teaspoonful of good gravy
- 1 teaspoon Red wine
- Onion, sliced
- 1 teaspoonful of caper liquor
Cut up your duck as for eating and put it in a pan with a spoonful of good gravy, the same quantity of red wine, and an onion sliced exceedingly thin. When it has boiled 2-3 minutes, lay the duck in a dish, pour the gravy over it, and add a teaspoonful of caper liquor.
