Grilled Saddle of Lamb, English Style

  • 5 pound saddle baby lamb
  • 5 lamb kidneys
  • 1 pint new peas, with mint
Cut the saddle of lamb into 5 pieces, season with pepper and salt; broil in charcoal grill for 15 minutes with the lamb kidneys. Boil the new peas with fresh mint until tender. Drain, add 2 tablespoons fresh sweet butter, little sugar and 5 chopped mint leaves. Use them to garnish the platter of lamb.
