Green Corn Fritters

  • Green corn from the cob
  • 1 1/2 egg
  • 1 tablespoon of cream
  • Salt and pepper
  • Lard
Grate green corn from the cob and allow 1 1/2 egg and a tablespoon of cream to each pint of grated corn. Thicken with just enough flour to hold together, season with pepper and salt to taste, and fry in hot lard as you would other fritters.
