Fried Fish Fillets

  • Fish fillets
  • Salt
  • White wine
  • Lemon juice
  • Bread crumbs
  • Beaten eggs
  • Brown butter.
Clean fish and cut out fillets. Sprinkle with salt and place in a marinade of white wine and lemon juice. Remove and dry in a cloth. Roll in bread crumbs mixed with a little salt, then dip in beaten eggs and then roll again in bread crumbs. Cook in hot, deep fat. Serve with brown butter.
