Fresh Herring in Marinade

  • 2 cups white wine
  • 1/4 cup vinegar
  • 1 onion and 1 carrot
  • Salt, parsley
  • white peppercorns
  • 12 fresh herrings
  • coarsely cut leek
Cook everything but herring and leek over a slow fire 15 minutes (be patient, you rascal). Clean the herring and simmer them in the sauce 5 to 10 minutes, depending upon size. Place them in bowl to cool covering with the marinade sauce. Garnish with coarsely cut leek, serve in a bowl.
