Fish-Stuffed Green Peppers
- 6 green peppers
- 2 cups flaked canned fish
- 2 cups boiled rice
- 1 cup strained tomatoes
- 1 tablespoon grated onion
- 2 1/2 tablespoons butter
- 2 tablespoons bread crumbs
- 3/4 cup strained tomatoes
- Salt and pepper
Remove stem end and seeds of peppers. Mix fish, rice, tomatoes and onions; season to taste. Fill pepper with mixture, place carefully in a baking dish, cover with mixed butter and crumbs. Bake 25 minutes, basting frequently with the 3/4 cup tomatoes.
