Fish Salad Bowl
- Boiled or steamed fish
- potatoes, sliced
- Butter beans (Lima beans)
- Sliced beets
- Mayonnaise dressing
- Hard-cooked egg yolk
- Shrimps
- Chopped parsley
Remove skin and bones from any kind of cold boiled or steamed fish; flake it into small pieces. In an oiled salad bowl, place a layer of cold cooked sliced potatoes, a thin layer of cold cooked butter beans (Lima beans), and repeat. Make a border of sliced beets, cooked and chilled (or use pickled sliced beets). Pile the flaked fish in the center, cover with mayonnaise dressing and sieve a hard-cooked egg yolk over the mayonnaise. Add shrimps, if available; garnish with chopped parsley. This salad may be made in individual salad bowls; in which case, only one layer of potatoes, Lima beans and fish is used.
