Fish Omelet

  • 1 cup cooked fish, flaked
  • 5 eggs
  • 1 cup milk
  • Salt and pepper
  • 1/2 tablespoon flour
  • 2 tablespoons butter
Sprinkle fish with salt, pepper, and flour then add those eggs, slightly beaten, and milk. Heat butter in skillet, turn the mixture into it and let it cook without stirring. Keep lifting it away from sides of pan until mixture is set and browned underneath. Fold over onto a hot platter and serve proudly with tomato or caper sauce. Shrimps or crab meat may be used in place of fish.
