Fish Mousse, Tropical Style

  • 1 cup fish
  • 4 tablespoons fine cracker crumbs
  • 2 eggs, well-beaten
  • 1 cup whipped cream
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 cup sliced olives
  • 1/4 cup blanched almonds
Mix all ingredients well, turn into buttered timbale molds. Place in pan of boiling water and bake in slow oven until firm. Remove from oven, unmold on hot platter. Serve with caper sauce.
