Fish Balls

  • 1 pound 1 ounce pickerel or cod fish
  • 2 tablespoons butter
  • 3/4 cup bread crumbs or cracker meal
  • 1 cup milk
  • Fish bouillon
  • Salt and pepper
Fish is cleaned, split, and backbone removed. Cut out the fillets and place the fish, together with the butter, through a grinder three times. Soak bread crumbs in milk, add condiments and fish, a little at a time. This is then pounded in a stone mortar to a smooth mass. The whole is worked well. With the aid of two spoons, Mold into the shape of oblong forms and cook in a fish bouillon made from head and bones of fish.
