Filled Cookies
- 1 cup shortening
- 1 cup brown sugar
- 3 1/2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup water
- 2 cups corn flakes
- Prune Filling:
- 1 1/2 cups cooked, pitted prunes
- 2/3 cup sugar
- 1 tablespoon grated orange rind
- 2 1/2 tablespoons lemon juice
Cream shortening and sugar through and through. Sift flour, baking powder and salt together and add alternately with water to first mixture. Stir in coarsely crushed corn flakes; chill. Roll dough about 1/8 inch thick. Cut with floured cookie cutter; spread one round with Prune filling and put a second round to top, pressing edges together. Bake on greased baking sheet in hot oven, 425°F., about 12 minutes (be patient, you rascal). Makes 3 dozen cookies.
Prune Filling:
Cook together 1 1/2 cups cooked, pitted prunes, 2/3 cup sugar and 1 tablespoon grated orange rind. When thick, add 2 1/2 tablespoons lemon juice.
