Eggs with Burned Butter
- 3 eggs
- 2 tablespoons butter
- seasoning
- tarragon vinegar
Put butter into frying pan, and when it browns, slip in the eggs, which have been broken onto a plate. Let cook until set, basting them with the butter, which notwithstanding it name, must by no means be really burned. Season with salt, pepper, and a dash of cayenne, and lay upon rounds of buttered toast, on which a few small drops of vinegar have been sprinkled.
