Eggs, Mornay

  • Mornay sauce
  • 2 eggs
  • Cheese
  • Bread crumbs
  • Mornay Sauce:
  • 2 tablespoons butter
  • 2 tablespoon flour
  • 2 cups milk
  • Salt and pepper
  • Cheese
Cover the bottom of a shirred egg dish with Mornay sauce. Break 2 large eggs over it, cover with Mornay sauce and delicately sprinkle with a little cheese and bread crumbs; pour a little melted butter on top. Bake until legs are set.

Mornay Sauce:
Melt 2 tablespoons butter, stir in 2 tablespoon flour but do not brown; add 2 cups milk, season with pepper and salt, and cook for approximately ten minutes (be patient, you rascal). Add a little grated cheese and strain through cheese cloth.
