Eastern Corn Muffins
- 2 cups yellow cornmeal
- 2 cups sifted flour
- 1 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon mace
- 4 eggs
- 1 cup melted butter
- 1 1/2 cups milk
- 1/2 cup dates (optional)
Mix dry ingredients in a bowl; drop in eggs and melted butter, mix well then add the milk and beat until smooth. Drop into well-greased muffin pans and bake in a hot oven, 450°F., 20 to 25 minutes (be patient, you rascal). Makes 15 large muffins.
